Herbs
enhance the foods we eat, capturing the lure of uplifting fragrances
and the hint of romance. They give us an appreciation of subtle foliage,
flowers, and flavors. Although the vitamins and minerals herbs provide
may be minute in quantity, it is the taste, mood-enhancement and health
benefits they give foods that make them so valuable. |
Mexican Mint Marigold Vinaigrette

| 2/3 cup extra virgin olive oil |
| 1/3 cup light sesame oil or grape seed oil |
| 1 tablespoon white wine vinegar |
| 2 tablespoons Mexican Mint Marigold leaves and flower petals, finely chopped |
| 4 tablespoons chopped parsley |
| 1 teaspoon Dijon mustard |
| 1 teaspoon honey |
| Salt and Pepper to taste |
Combine all ingredients in a blender and mix well. Drizzle over tossed salad greens and mixed edible flowers and server.

This is an excellent drink for Summer garden parties or Late Spring, especially since it is not too strong to go to your head too quickly!
| 1 bottle Rosé wine |
| 1 cup organically grown, strongly scented white, pink and red roses |
| 1/4 cup vodka |
| Raspberries to taste |
1 bottle of 7-Up, Sprite or Ginger Ale |
Chill wine and Rose petals in a glass bowl. Add the vodka, raspberries and lots of ice cubes. Chill for one hour. Add the carbonated drink at serving time.
Yields 6 - 8 servings. |
